Anchovies on Toast…

Our so often chilly North Sea waters make us all think twice about even taking a quick dip but the Anchovy has shown us the way.

They have moved north out of their native waters of the Mediterranean so perhaps ‘Anchovies on Toast ‘ will be on the local menu yet ! But I am advised you need good quality fish.

So if you are fishing this weekend here is a quick step by step guide for a ‘failsafe snack’ when you arrive home with your haul.

Snack Attack

  • Toast the bread or baguette, butter and cut ‘into fingers or strips’ to accept each chosen anchovy
  • Drain the anchovies
  • Lay a base of thinly cut tomatoes and anchovies on each finger of toast
  • Drizzle with olive oil, add parsley and a sprinkle of black pepper
  • Serve promptly………… with a meaty glass of white wine or Beaujolais
